Inside, chef Atsushi Tanaka puts his diligence at the service of gastronomy. Always seeking perfection, he has freed himself from any label to become master of a culinary art, combining dynamism and firmness in equal parts.
Raised in Japan, formed between Spain and Scandinavia, and finally established in France, chef Tanaka’s cuisine is nor from one place, nor from the other. But it is precisely this international background and Japanese heritage that makes it unique and incomparable. Cultural diversity can be perceived in every detail of the proposal, merging together to write a poem for the palate, for the eyes and for the soul.
Throughout his career, he has traveled through Paris, along with Pierre Gagnaire, the kitchens of Quique Dacosta in Alicante, Pastorale, Sergio Herman and Slius, as well as the most renowned Scandinavian restaurants, such as Geranium in Copenhagen, Frantzen and Oaxen Krog in Stockholm. But beyond being a chef, Atsushi Tanaka is an artist, a poet of the senses.
The sensitivity, serenity and deep refinement of the Franco-Japanese chef can only be understood upon entering his home, in which aesthetics share prominence with taste. He is honest to the rythms of his land, respectful of the seasonality of the product, and devoted to mastering a craft. His imaginative passion develops on an artistic composition of dishes, where the product becomes the heart, and the materiality becomes the body. Despite a self-limitation on the use of ingredients to maintain purity in his dishes, Atsushi uses a language in which beauty becomes the protagonist and is reflected in each verse of his menu.
