Los Gatos, California, December 18, 2023. Ritual at Manresa welcomes chef Ángel León and his crew from Aponiente (Puerto de Santa María, Spain, 3 Michelin Stars) to Los Gatos for a three-week residency in January to cook in one of the most beloved restaurant kitchens in the world. Curated by Chef David Kinch, Culinary Ambassador for Ritual at Manresa, the full year lineup will also include the participation of Junghyun Park from Atomix (New York, 2 Michelin Stars; World’s Best Top 10), Alex Atala from D.O.M.  (São Paulo, 2 Michelin Stars), Jeremy Chan from Ikoyi (London, 2 Michelin Stars), Julien Royer from Odette (Singapore, 3 Michelin Stars), Nick Bril from The Jane Antwerp (Antwerp, 2 Michelin Stars), Isaac McHale from The Clove Club (London, 2 Michelin Stars), Paul Liebrandt (New York, Chef of Previous Michelin Starred Restaurants), Arnaud Faye from Château de la Chèvre D’Or,  (France, 2 Michelin Stars), and Paolo Casagrande from Lasarte (Barcelona, 3 Michelin Stars).

The first residency begins Wednesday, January 17, with Chef Ángel León of Aponiente offering his iconic preparations, such as the marine charcuterie, the halophiles pil pil or the plankton butter.

Ritual at Manresa is a fitting follow-up to the 2022 closure of three Michelin-starred Manresa, a venture that ultimately established Los Gatos as a culinary destination in the Bay Area. The restaurant was known for its innate attention to detail and world-class hospitality. In 2017, Kinch traveled with his team through France, popping up in the country’s esteemed kitchens from Le Taillevent in Paris to Le Petit Nice in Marseille. These experiences have inspired the renowned chef’s next venture: welcoming the most amazing creators in the culinary world to South Bay in partnership with brothers and Ritual co-founders Juan and Luis Caviglia.

They designed Ritual at Manresa to empower the most amazing gastronomy creators worldwide, placing importance on providing chefs with the resources and time needed to experiment, create, and elevate their craft. The platform is more than just a culinary endeavor; it is a commitment to offering chefs a supportive environment where they can flourish and showcase their creations to an audience on the other side of the world. Chefs will arrive for three weeks at a time, hosting dinners Wednesday through Sunday with only 48 seats available each evening.

«That the concept of Aponiente transcends borders is something that always makes me especially excited. Bringing the essence of Cadiz, the oldest city in the West, to the New World is a romantic idea and a great bet. Not only the elaborations but also a great part of the kitchen and dining room crew will travel to present our proposal in 15 unique services. That a site of such international transcendence wants to share with its customers the gastronomy and our vision of the sea is exciting, that they support us in the search for that desire to awaken change, to look at nature with hunger and to continue discovering in the unknown sea ingredients that we never dreamed of finding, to find new solutions to ancient problems… I thank David Kinch and Ritual at Manresa for daring to take the Aponiente team and cuisine to California,» says Ángel León.

“After over twenty years of devotion to building Manresa, I am thrilled to be a part of its next chapter, joining Ritual at Manresa as its Culinary Ambassador,” shares David Kinch. “Ritual at Manresa is the perfect continuation of the legacy of Manresa – moving from a three-star experience to welcoming some of the best chefs in the world, revolving and evolving every month. Ritual at Manresa will be a creative playground for top culinary talent to innovate and create right here in Los Gatos”.

About Aponiente and Ángel León

*** Michelin Stars, Michelin Green Star for Sustainability, Sustainable Restaurant 2022 The World’s 50 Best Restaurants and #64 The World’s 50 Best Restaurants 2023.

Aponiente restaurant is located in a former 19th century tidal mill. In the heart of the Bahía de Cádiz Natural Park in El Puerto de Santa María, the area is inhabited by marine life that is subject to constant change, given the local climatic conditions and the rhythm of the tides.

Led by chef Ángel León, Aponiente is carrying out the recovery of the environment in which it is located, creating an ecosystem for future generations. A benchmark in sustainability, it promotes the defense of the environment through gastronomy. Sustainable fishing and the use of species that have historically been considered discarded products are the hallmarks of the gastronomic proposal of the «chef of the sea», together with innovation, creativity and honesty.  A revolutionary genius whose commitment to nature has led him to discover, use and reinvent foods from the great larder of the sea.

About Juan and Luis Caviglia, Co-Founders of Ritual at Manresa

Two brothers from Uruguay earned their first dollars out of a shared computer they had in their bedroom during the late 90s. Meanwhile, their sister traveled the world, cooking and learning at some of the most beloved restaurants in California, New York, Patagonia, and José Ignacio. She grew to become a successful Chef, and the boys ended up building a software company to serve restaurants. Juan and Luis have worked closely with some of the most celebrated chefs in the world.

Their curiosity for the hospitality industry and its intrinsic challenges led the brothers to start their own culinary initiative in 2021, inviting their most trusted and talented chefs to fly to California and create unique experiences in private homes. Ritual opened up a new hospitality realm, making it easy and frictionless to host the most sophisticated and passionate food lovers at the table with the most renowned and trailblazer chefs in the world.
