Once again, the D.O.Ca. Rioja turns Madrid into an international gastronomic destination, bringing on this occasion the proposal of chef Nicolai Nørregaard, from restaurant Kadeau in Denmark
- In just a few days, the third In Residence Session by Rioja will set off, the pop-up event with which renowned international chefs transfer their gastronomic experience to Madrid for a few days.
- On this occasion, Rioja will bring chef Nicolai Nørregaard from restaurant Kadeau in Denmark, just like it did at the beginning of the year with the team from Kasama in Chicago, and Osip in Somerset.
- The chef and his team will move from Kadeau, precursor of New Nordic cuisine movement, to offer its gastronomic proposal in Madrid between November 6th and 10th.
- Kadeau has two distinct locations within Denmark, one in Bornholm awarded with one Michelin Star and one Green Michelin Star, and another one in Copenhagen, awarded with two Michelin Stars and one green Michelin star and ranked n·54 on The World’s 50 Best Restaurants list.
- The diversity of the wines from Rioja will allow pairing and elevating the dishes of international haute cuisine, thus turning the three restaurants into embassies of Rioja in their countries.
- Rioja shows its connection with the international gastronomic markets such as the UK, the US or Denmark, where its presence is notable.
- Once again, the pop-up, launched annually by the gastronomic consultancy firm Mateo&co, will be located in the space Semilla Food Studio, in José Ortega Street and Gasset 67 of Madrid.
- Only nine services will be offered for 16 people each, at a shared table. The cost of the menu is 280€ with pairing of Rioja wines.
Madrid, November 4th, 2024. After the success of the pop-up Kasama and Osip In Residence Sessions by Rioja, held in April and May, respectively, Rioja once again turns Madrid into a world gastronomic destination, promoting the annual event In Residence as the main sponsor. On this occasion, Rioja will bring chef Nicolai Nørregaard, owner and co-founder of the restaurant Kadeau, with two locations in Denmark.
Wednesday November 6th will mark the beginning of Kadeau In Residence Session by Rioja, which will bring to Madrid the international cuisine of the Danish restaurant Kadeau, and whose gastronomic proposal will be available in Madrid for five days. The chef and all his team will move to the Spanish capital city on the occasion of the pop-up, which will run from November 6th to November 10th, with daily lunch and dinner services. They will offer a single set menu that will be served at a shared table, at a price of 280€ including a pairing of wines from Rioja.
For over fifteen years, Kadeau has attracted discerning guests from around the world to experience the unique cuisine and story of the Danish region in which it is located. It has two distinct locations, both recognised by the Michelin Guide. In addition, the restaurant is currently ranked n. 54 on The World’s 50 Best Restaurants list.
The original restaurant, founded in 2007 by chilhood friend Nicolai Nørregaard and Rasmus Kofoed, is located in Bornholm, a small island in the Baltic Sea with its very own special microclimate. With a dedicated kitchen garden nearby and access to forests, beaches and wild fields, Nicolai Nørregaard together with his long term head chef and partner Kyumin Hahn began to shape a cuisine with local terroir as the main focus. Kadeau Bornholm still remains the only restaurant on Bornholm with a Michelin star and was awarded a Michelin green star in 2023.Kadeau Copenhagen was founded in 2011 and is now located in the old Christianshavn area of the city. With two distinct seasons throughout the year, the kitchen showcases the best produce and food traditions of Bornholm with a clear focus on foraging and preservation. It has successfully retained two Michelin stars since 2018, as well as a Michelin green star since 2023 (same and Kadeau Bornholm), and is the one that occupies position n. 54 on The World’s 50 Best Restaurants list.
Today, Kadeau is open on Bornholm during the summer months – from May to September – and in Copenhagen all year round.
The In Residence Sessions Kadeau menu will be paired by Rioja wines that will showcase their diversity and excellence.

#InResidence once again turns Madrid into a meeting point for lovers of haute cuisine. Nicolai and his team will this time be based in Semilla Food Studio, in Madrid, joining the last ten editions of the project:

This 2024, In Residence launched a special edition in a more casual format, with shorter pop ups, for several days, but with a more extensive programme covering the whole year. Ivan Orkin was commissioned to premiere this season last March, followed by chefs Timothy Flores and Genie Kwon who brought their Michelin-starred Kasama restaurant to the city in April, and finally Merlin Labron-Johnson moved is “farm-to-table” gastronomic proposal for Madrid for a few days in the month of May.
#KadeauInResidencebyRioja, and all other sessions will take place in the Semilla Food Studio space, located on José Ortega and Gasset 67, in the neighborhood of Salamanca, Madrid. This will be the main venue for all In Residence Sessions in 2024.
Chefs from all over Europe and the U.S. have been the protagonists of the calendar of the past months for the In Residence Sessions, which have brought to Madrid Michelin proposals from other parts of the world including the United Kingdom, by the hand of the restaurant Osip, or the US, with the chefs of Kasama in Chicago.
About Nicolai Nørregaard
Nicolai Nørregaard is the head chef and co-owner of restaurant Kadeau in Copenhagen(**) and Bornholm(*). He was born and raised on the island of Bornholm, a small Danish Island in the Baltic Sea.
As a child he was highly influenced by his grandfather’s cooking, who cultivated and grew his own vegetables, caught much of his own seafood and spent a lot of time carefully preserving ingredients so that he could remain self-sufficient during the winter months. This way of cooking, very traditional in Bornholm, is what inspired Kadeau, and is the foundation of Nicolai’s cooking.
Nicolai Nørregaard is widely acclaimed as one of the forerunners of the New Nordic movement, working hyper-seasonally in close connection with nature, bringing innovative advancements and new perspectives to the ancient art of preservation, and ultimately challenging and redefining attitudes towards traditional fine dining.Nicolai has been a guest speaker at Madrid Fusion, the European Food Summit and CARE’s Ethical Chef Days – as well being featured in the New York Times, Financial Times and Vogue.
