Chef Juan D’Onofrio prepares to bring his culinary concept to Carousel for one week
London, July 1, 2025 – Juan D’Onofrio and his team are getting ready for their first international pop-up, taking Chispa Bistró’s concept to the British capital from July 8 to 12.
Each week, Carousel welcomes a new guest chef to its Charlotte Street venue, offering Londoners and international visitors a taste of the chef’s hometown cuisine. For each residency, the local and guest teams collaborate to create a bespoke menu and custom wine pairing.
Together with the Carousel team, Chef Juan D’Onofrio has crafted a special menu that reflects his culinary philosophy at his restaurant in Madrid, this time adapted to local produce and the carefully curated network of suppliers that Carousel has selected for its guests. This exclusive menu will be available for five nights only, during dinner service.

Carousel’s open kitchen hosts a constantly rotating line-up of chefs from around the world. So far, they’ve welcomed over 350 guest chefs from more than 80 cities and 50 countries.
Among many acclaimed chefs who have cooked at Carousel are Jeremy Chan of Ikoyi, Santiago Lastra of Kol, Jacki Chan of A. Wong, Diego Rossi of Trippa in Milan, and Deborah Fadul of Diacá in Guatemala, among others.

About Juan D’Onofrio and Chispa Bistró
Juan D’Onofrio was born in Buenos Aires in 1997. In 2017, after a brief stint studying advertising, he enrolled in the Lycée culinary school (Buenos Aires). A year later, he moved to Barcelona to continue his training at the Bellart school of gastronomy and pastry.
After completing his studies, he worked with chef Álvaro Garrido at Mina (1 Michelin star, Bilbao) and at the now-closed Santceloni (2 Michelin stars, Madrid). During the pandemic, he returned to Argentina and worked alongside chef Dante Liporace (formerly of ElBulli) at Mercado de Liniers.
Following international experience in several kitchens, he settled in Madrid, where Chispa came to life. The restaurant now has a team of 8 who share a common philosophy: connecting with guests through both the kitchen and the dining room.
In 2023, Chispa earned its first Repsol Sun and was listed as a Michelin Guide Recommended restaurant, also appearing in other guides such as Macarfi. At just 26, Juan was the youngest chef among that year’s new Michelin Recommendations. A year later, he proved once again that young talent is thriving in Spain’s culinary scene, earning his first Michelin star.
About Carousel
Since their first chef residency in August 2014, led by chef Javier Rodríguez of El Papagayo in Argentina, Carousel has aimed to diversify London’s culinary scene through a rotating program of shared experiences that connect a global community of adventurous chefs.
After seven years in Marylebone, they moved to Charlotte Street in November 2021, adding a neighborhood wine bar to their rotating chef line-up, along with two event spaces. Next door at No. 23, they also opened their own mezcalería with a curated selection of signature cocktails for 23 guests.
No two days are the same at Carousel, but every experience is defined by high-quality ingredients sourced from British farmers, foragers, and fishers; warm, welcoming service; and a carefully curated program of one-of-a-kind experiences unlike anything else in London.
