Tarragona, February 16, 2026 — VORO, the restaurant led by chef Álvaro Salazar and located at Cap Vermell Grand Hotel (Canyamel, Mallorca), has been awarded Three Suns in the 2026 Repsol Guide, the highest distinction granted by Spain’s prestigious gastronomic guide. At the Repsol Guide Suns Gala, held this Monday in Tarragona, this top honor was presented to only three restaurants, including VORO.
The 2026 Repsol Guide thus confirms VORO as one of the leading references in the national culinary landscape, with a proposal that continues to evolve with personality, clarity, and a steady rhythm. This recognition highlights the work of a team that has developed a singular concept, rooted in the Mediterranean and shaped by the chef’s Andalusian memory and sensibility.
Now distinguished with Three Suns, and already holding two MICHELIN Stars, the restaurant represents a cuisine with its own intimate and personal language—one that brings together Álvaro Salazar’s Andalusian tradition with the essence of Mallorca and Spain’s broader gastronomic heritage. The Three Repsol Suns are awarded to restaurants where “from the very moment you walk in, you sense the experience will be unique.” They recognize profound cuisine, a carefully curated wine cellar, and a coordinated front-of-house service that places the guest at the center of the experience.
“For me, receiving the third Repsol Sun is recognition of the work we have been doing on the project in recent years; recognition of its service, its cuisine, and the efforts of an entire team that makes the project what it is today, as well as added value that will enable us to continue striving and achieving our dreams,” Álvaro Salazar declared during the gala. The chef is already preparing for the start of the 2026 season in March.
The restaurant is located in the northeast of Mallorca, set within a natural landscape framed by mountains and the Mediterranean Sea. It is situated within the five hectares of Cap Vermell Grand Hotel, in the resort’s central square—an area infused with local art and Balearic culture. The name of the restaurant, derived from the Latin vorare, means to devour or to eat with passion—a philosophy reflected in every dish. The Mediterranean Sea serves as the guiding thread of VORO’s gastronomic proposal. For Álvaro Salazar and his team, there are no new seasons—only the present moment, with a commitment to improve every single day. The cuisine is structured around the daily cycle of the sun—from dawn to zenith and into dusk—a metaphor for the team’s philosophy: constant evolution and progressive refinement.

About Álvaro Salazar
Álvaro Salazar Almansa was born in 1985 in Linares, Jaén. He began his hospitality studies at the age of 16 at the Hospitality School of Córdoba. At 17, he completed his first internship at the restaurant Tragabuches in Ronda, under the guidance of Benito Gómez. He later continued his training at El Portal de Echaurren in Ezcaray, coinciding with the restaurant being awarded its first Michelin star. Following this period, he returned to Córdoba to take part in the opening of Palacio del Bailío, the city’s first five-star hotel, where he worked in the kitchen.
Throughout his career, he has worked in several restaurants and projects both in Spain and abroad. In Murcia, he was part of the team at La Seda alongside chef José Carlos Fuentes. In Madrid, he worked at Sergi Arola Gastro, a two-Michelin-starred restaurant. He also gained international experience in Paris, providing luxury catering services and private dinners, as well as in Kuwait, where he worked for the royal family. In addition, he undertook gastronomic experiences in Stockholm.
In 2015, he was selected as one of the ten best young chefs in Spain and Portugal by the San Pellegrino guide. That same year, he took on the role of gastronomic director at Argos, the restaurant located within Hotel La Goleta in Puerto de Pollensa (Mallorca). In 2017, he earned a Michelin star for Argos, which he maintained until his departure from the project.
In March 2019, he opened VORO at Cap Vermell Grand Hotel in Canyamel, also in Mallorca. In November of that same year, VORO was awarded its first Michelin star, followed by a second in 2021. Since then, he has continued to lead the restaurant as executive chef.
