Overseen by two-Michelin-starred chef Giuseppe Mancino, the celebrated breakfast at the Tuscan hotel, in Viareggio, brings the philosophy of Il Piccolo Principe to the first meal of the day, with more than 150 specialities, exceptional local produce, live cooking and a remarkable selection of wines, coffees and teas.

Viareggio, 18 September 2026 –  At Grand Hotel Principe di Piemonte, the gastronomic experience does not wait until dinner. It begins first thing in the morning. Under the supervision of Giuseppe Mancino, chef of the hotel’s two-Michelin-starred Il Piccolo Principe, breakfast has evolved into one of the property’s defining experiences: an extraordinary collection of more than 150 preparations where Tuscan ingredients, international influences, craftsmanship and tableside service come together in the Salone degli Arazzi.

Named Best Breakfast in Italy by 50 Top Italy in 2024 and awarded Best Hotel Breakfast at the Food & Wine Italia Awards, the experience applies many of the principles associated with fine dining to a moment of the day that is too often treated as secondary: rigorous sourcing, seasonality, technique, personalisation and attention to service.

The result has also attracted international attention. National Geographic recently featured Grand Hotel Principe di Piemonte among a select group of hotels around the world redefining breakfast as a gastronomic experience, while Forbes Italia included it among 20 exclusive experiences to enjoy at least once in a lifetime, , describing it as “Italy’s most luxurious breakfast”.

From Tuscany’s sea to the breakfast table

Mancino’s cuisine has always been shaped by the meeting point between the Tyrrhenian Sea and inland Tuscany, and breakfast follows the same geography.

Fresh seafood sourced from local fishermen brings the Viareggio coast directly to the table, with oysters and other raw and cooked seafood alongside sushi prepared to order by a dedicated sushi chef. Vegetables, herbs and fruit are sourced from Tuscan growers and the hotel’s own biodynamic garden, while eggs come from carefully selected local producers.

Rather than treating provenance as an abstract concept, the breakfast gives individual ingredients and producers their own space. This approach extends across the buffet, from charcuterie and cheeses to chocolate (with a special station), seasonal fruit and vegetables.

The bakery is another central element. More than 20 varieties of bread and focaccia are prepared using carefully selected flours and slow fermentation, while the pastry section features over 25 creations that evolve regularly, including mini waffles, pancakes and gluten-free preparations.

150 specialities and a kitchen that never stands still

Breakfast is conceived as a constantly evolving gastronomic landscape in which guests move between the buffet, live cooking stations and dishes prepared to order. Alongside Italian breakfast traditions sit influences gathered from further afield: freshly prepared sushi, ramen and a dedicated Middle Eastern selection coexist with Tuscan produce and classic European preparations.

Eggs are given particular prominence. Beyond poached, fried and soft-boiled eggs, omelettes and Eggs Benedict, guests can explore a collection of signature preparations available à la carte. Among them are a poached Chilean blue hen’s egg with Oscietra Royal caviar and lemon; avocado toast with poached duck egg and seeds; salmon tartare with poached Livornese hen’s egg, sautéed spinach and Béarnaise sauce; and a Mugellana hen’s egg omelette with caramelised onion, pecorino and truffle caviar.

And then there is one of the signatures of the experience: Crêpes Suzette, flambéed tableside, turning the final moment of breakfast into a piece of dining-room theatre.

Beyond coffee: a breakfast with its own pairing culture

The same attention extends to what is poured into the glass or cup. A rotating selection of specialty coffees sourced from small producers around the world can be prepared through different extraction methods, including V60 and cold brew, while the tea list moves beyond conventional hotel service with references including Japanese Yame Matcha Saemidori, wild Oolong from Fujian, Yesheng Shaihong from Yunnan and Taiwanese Sun Moon Lake black tea.

The hotel’s cellar, home to more than 1,400 references, also enters the breakfast room. A sommelier selection offers wines and Champagnes by the glass or bottle, from Italian sparkling wines to prestigious Champagne houses, creating pairings for oysters, caviar, sushi and egg preparations.

For those who prefer a cocktail, Bellini, Rossini and Mimosa complete a morning drinks list that approaches breakfast with the same freedom normally reserved for lunch or dinner.

A combination of exceptional produce, live preparation, global influences, pastry, wine, coffee, tea and service. At Grand Hotel Principe di Piemonte, fine dining therefore does not begin with an evening reservation. It begins at breakfast.

About Giuseppe Mancino

Born in Sarno (Salerno) in 1981, Giuseppe Mancino has become one of Italy’s most respected culinary figures, known internationally for his refined interpretation of Italian cuisine. Since 2005, he has been at the helm of Il Piccolo Principe, the fine dining restaurant of the Grand Hotel Principe di Piemonte in Viareggio, Tuscany, which under his leadership was awarded its first Michelin star in 2008 and a second in 2014.

Mancino’s career has been shaped by formative experiences alongside some of the most influential names in gastronomy, such as Alain Ducasse and Gualtiero Marchesi. The connection with Principe di Piemonte Hotel started by chance 22 years ago. From that moment, the chef fell in love with Viareggio and decided never to leave. Recognized by major guides and awarded distinctions such as the prestigious “3 forks” in Gambero Rosso’s Italian Restaurant Guide, Mancino continues to position Il Piccolo Principe and Viareggio among the top fine dining destinations in Italy, while showcasing the gastronomic richness of Tuscany to the world.
